厨房空调系统不宜采用风机盘管系统，因为厨房内油烟、水蒸气较多，长期循环室内污浊空气势必造成油烟附着在盘管表面，使其传热系数大大降低，冷却效果越来越差，以致不能使用。

厨房送风包括两部分：室外新风和空调风。

(1)室外新风。室外新风通过轴流或离心风机经风管送入靠近炉灶处．主要起到补风作用。新风位置要适当，送风切不能在厨师头顶或颈后直吹，否则会造成不舒适，严重的会引起厨师职业病。送风口距厨师约1．5m较合适。
